Take Time to Smell the Lilacs

I can’t wait to scrap this picture. I love our 50 yr old lilac bushes and capturing Savana in her recital costume taking time to smell the lilacs was priceless.

MANAGER!

I am SOOOO excited!! I was just promoted to manager with Close to my Heart. It’s so funny how that has been my goal for the 3 yrs I was with LP. So, obviously God answered my prayer, but with Close to my Heart. He always answers our prayers, but in His time and in His way. Last night was Savana’s recital. What a beautiful girl and what an emotional time. I am so blessed to be the mother of my two beautiful and special girls.

I was presented with a gift card for a full facial and some other treatment. The nestest part is that my cousin who is graduating from VICI today is doing it. I was so surprised and it is exciting to see her dreams come true.

We did this layout for Nichole’s party. It was so fun! I loved seeing what everyone else did with their pieces. They loved the stamping and I loved showing them how easy it was to use stamps with your scrapbooking.

WOW! The last 2 weeks have been crazy busy! I did 3 parties, 2 classes, 1 Open House, 2 Girl Scout groups and welcomed 4 new people to my team!! Whoo Hoo!! Have I said lately how much I LOVE CTMH??? It has been SO much fun!

So, My Daughter Has Autism

It has been a while since I have written, simply because I have been looking for the right words. We finally got the dignosis we have been fighting for the last 3 years. Sofie is on the Autism Spectrum with PDD NOS. The social aspect has been confusing everyone, but the other pieces fit. So, my daughter has autism. I have been saying that in my head for weeks now, attending her 3 hour long IEP, talking to family and friends and trying to make sense of it all. So, after all the tears and screams of frustrations I am committed to taking every step and measure I can to beat the odds. I am convinced we can rise above this and not let this diagnosis define who we are as a family and who she is as a child. I have accepted the fact that Sofie will not be like every other child, but she is MY child and that is all that matters. There, I think I found the words.

So Sad!

I just have to say I am watching the Convocation for the Virginia Tech Community on the TV right now and how sad! I guess we never know when our time will come. I am praying for all those suffering and grieving. I cannot imagine the pain and heartache those families are feeling. How does something so senseless ever become clear? Faith is amazing….Hold on to it. Times like these it’s all we have.

Back to SCRAPBOOKING!!

Okay, back to your regular scheduled programming! LOL!! Brenda, Nichole and I went to the Midwest Scrapbook Convention on Saturday. We saw so many people we knew it was like a Scrappers Reunion! I didn’t buy a thing, but I was TEMPTED!! The word of the day was CHIPBOARD! WOW! It was everywhere and mini albums galore! I got so many great ideas I couldn’t sleep that night! I finally met the owner of the Stamper’s Cupboard. Everyone has been telling me to go and see the store. After being in the booth, I can tell I would want to move in there! Therese said if I had a class idea she is always looking for people to teach. So, I may look into that! That would be SO fun! Being in her booth alone reignited my passion for scrapping- beyond the business side. It was touching my core! I LOVE IT!!!

I was so sad not being a vendor. I was networking and LOVE talking to everyone! That type of event is what I am made to do. Reach and connect with those who share my same passion and values. Being a scrapbooker is better than any match making service. My best customers have become my best friends because it is obvious we cherish life and capture it and value our families and friends. I think that is SO rare to find such amazing friends in our adult lives! What a blessed bunch we are- us scrapbookers!!

More Than a Mom

I am reading an awesome book right now. I check it out of the library every 6-8 months or so and read it to remind myself of a lot of things. If you have a special needs child in your life or know of a Mom that does, I reccomend this book: “More than a Mom” Living a Full and Balanced Life When Your Child Has Special Needs

BALANCE!! HA! No gym time this week, very little scrapping and a snow storm in April. Yeah, I am lacking balance! Lol!!

This has been an exceptionally hard week for me. Sofie hasn’t been to school in over a week, so she is starting to suffer. Yesterday we had another morning of testing at the Neuropsychologist. Sofie had a hard time getting settled but did okay. But then they brought her out to me and said in 5 minutes she was going back. She was SO UPSET and had a complete melt down. Secretly I was rejoicing that she was displaying this behavior so they could witness Sofie outside of a controlled enviroment similar to school. But my heart was breaking to see her that way. To make matters worse Savana was visibly upset and is having a hard time being around her sister and witnessing this. Seeing your kids in pain is the worst thing in the world and I was SO tired after all of that.

The best part of my day was when Scott walked in and said ‘You look drained” YES! Thank you! I am drained emotionally and physically and YOU NOTICED! Not only did he notice but he offered to go to the store- (which Sofie was NOT going to do after all of that. She flipped out because we went to the Drive Thru at Burger King instead of directly home!) He also said he would make dinner and he did and it was so nice knowing that I am not in this alone. He is reaching out to me and knowing that we are in this together is a gift. That one sentence was like going to the well and filling my bucket. I can do this!!! Thank GOD!!!!!

A YUMMY Kid -Friendly Recipe

WOW! I was watching Rachael Ray the other day while I was working (of course) and she made a GREAT recipe for Turkey Taco Salad Bowls. They have become quite the hit with my girls, so I thought I would pass it along! I am going to go even lower cal and try the whole wheat ones. I also am going to do a dessert version with frozen yogurt and honey ( tastes like fried ice cream) she said.

We made mini bowls in a regular size muffin tin. I could really picture these at a crop or Fiesta party for Close to my Heart! The minis you can pick up at eat- so FUN!!

Turkey Taco Salad Bowl

Dinner
This meal is great to make with your kids.

ingredients

6 8-inch flour tortillas
Cooking spray
2-3 tablespoons extra-virgin olive oil (EVOO)
1 package (about 1 1/3 pounds) ground, all-white-meat turkey
Salt and freshly ground black pepper
1 small onion, chopped
2 cloves garlic, grated
1 tablespoon (about a palmful) chili powder
1/2 tablespoon (about half a palmful) cumin
1/4 head iceberg lettuce, cored
1 cup yellow cheddar cheese, shredded
3 plum tomatoes, seeded and chopped
1 avocado, peeled, pitted and chopped
1/2 cup black olives, chopped
1 jar store-bought taco sauce

preparation

Preheat oven to 375°F.Wrap the tortillas in a damp towel and microwave for 10-15 seconds. Spray each tortilla on both sides with cooking spray and gently push them into a jumbo muffin tin, forming a cup shape. bowl_bowl Make a couple extras so you can choose the nicest ones out of the batch. Bake tortillas for about 10-12 minutes or until they are golden brown and hold their shape.While the tortillas are cooking, place a medium-size, nonstick skillet over medium-high heat and add 2 turns of the pan of EVOO, about 2 tablespoons. Add the ground turkey, season with salt and pepper and cook, breaking up the pieces with the back of a wooden spoon, about 6-7 minutes until brown all over. Kid helpers can break up the meat with a potato masher.bowl_mash Add another turn of the pan of EVOO if the mixture is dry, add onion and grate the garlic right over the skillet with a microplane grater or the fine side of a box grater. bowl_grater Cook for about 3-4 minutes, then add the chili powder and cumin, and cook for another couple minutes. If the mixture seems dry, add a couple tablespoons of water to loosen it up. Turn the heat off and set aside to keep warm.Let a kid helper shred up the lettuce with a kitchen scissors. Chop the avocado last so it does not turn brown and get all icky.Place the tortilla bowls into four deep cereal bowls and scoop a couple of big spoonfuls of the turkey mixture into each tortilla. Top the turkey with a sprinkle of cheese, some chopped tomatoes, avocadoes, olives and shredded lettuce on top – whatever toppings you like! Spoon a couple tablespoons of taco sauce over the top and serve.

Here is what I did tonight! I had a lot of fun making my examples for my class next Tuesday. So far I have 4 people coming 🙂

Tomorrow is Sofie’s first actual appt at the neuro-psyche. So, I pray that she does well and I hope we are just one step closer to finding out what really is the underlying cause of her issues.
